Description

These healthy air fryer churro bites deliver all the nostalgic flavor and golden crisp of classic churros, but with less oil and sugar. Ready in under 20 minutes, they’re a quick, wholesome snack or dessert perfect for sharing.


Ingredients

  • 1 cup whole wheat flour (120g)
  • 1 teaspoon baking powder (5g)
  • 1/4 teaspoon salt (1g)
  • 1/2 cup plain Greek yogurt (120g, full-fat or low-fat)
  • 2 tablespoons coconut sugar (24g, or brown sugar)
  • 1 large egg, room temperature
  • 1 teaspoon pure vanilla extract (5ml)
  • Olive oil spray or avocado oil spray
  • 1/4 cup coconut sugar (48g, or granulated sugar) for coating
  • 1 teaspoon ground cinnamon (2g) for coating

Instructions

  1. Preheat your air fryer to 350°F (175°C) for about 3 minutes. Line the basket with parchment paper with holes for air circulation.
  2. In a medium bowl, whisk together whole wheat flour, baking powder, and salt.
  3. In a separate bowl, combine Greek yogurt, coconut sugar, egg, and vanilla extract. Stir until smooth.
  4. Pour the wet ingredients into the dry and mix with a silicone spatula until just combined. Do not overmix.
  5. Using a small cookie scoop or tablespoon, portion out dough balls about 1 inch across (you should get 16-18 bites). Roll gently between your hands for a round shape. If sticky, dust hands with flour.
  6. Lightly spray the churro bites with olive oil or avocado oil spray. Place them in the air fryer basket, leaving space between each bite. Cook in batches if needed.
  7. Air fry for 7-8 minutes, shaking the basket halfway through. Bites should be golden brown and puffed. Add 1-2 minutes if needed, but avoid overcooking.
  8. While bites cook, mix coconut sugar and ground cinnamon in a shallow bowl for the coating.
  9. As soon as the bites come out of the air fryer (while still hot), gently toss them in the cinnamon sugar mix.
  10. Transfer coated churro bites to a wire rack to cool slightly. Enjoy warm for best flavor.

Notes

For gluten-free, use a 1:1 gluten-free flour blend. For vegan, use plant-based yogurt and a flax egg. Do not overcrowd the air fryer basket for best crispness. Toss bites in cinnamon sugar while hot for best coating. Store leftovers in an airtight container for up to 2 days or freeze for up to 1 month. Reheat in the air fryer to restore crispness.
